Contrary to the name, Asian rice noodles don't cook at all like classic pasta noodles. Rice noodles, or rice sticks as they are sometimes called, actually should not be boiled at all to cook. While this concept can be trying for even experienced chefs, it really isn't too tricky. Different techniques should be used for different dishes, and with a little practice perfect rice noodle dishes can be attained by novice kitchen dabblers and experts alike.

The quickest way to prepare rice noodles for using cold is to cook them in hot water. Fill a pot with enough water to theoretically submerge the noodles, but keep the dry noodles on the side until you are ready for them. Bring the water to a boil and remove from heat. Add the rice noodles and allow to soften for 30 seconds, then stir with a fork to break apart and separate. Let them soak for another 3 minutes, until pliable but al dente. Rinse thoroughly in a colander with cold water until they are completely cool to prevent further cooking and unwanted sticking. These rice sticks are now ready for use in a cold salad or spring roll.

The surest way to turn rice noodles into a gooey glob is to overcook them, and that can be tricky with sauteing since they need to first be softened and then pan-fried. The trick is not to cook the noodles to soften them the first time around. Place the dried noodles in a large bowl and cover them with cool water for anywhere from 20 minutes to an hour, depending on the thickness of the noodle, soaking until pliable and al dente. These noodles are now ready to be added directly to your stir-fry and cooked in a pan for 3 to 5 minutes with other ingredients and sauces.

Add rice noodles directly to soups or curries at the end of the cooking time. Prepare soup or curry as you wish, leaving the uncooked rice noodles to the side but cooking everything else to desired doneness. Turn off the heat completely, then add the rice noodles, cover and let sit for 3 to 5 minutes before serving.

Keep the noodles moving and coated with enough oil or sauce to prevent sticking and clumping while pan-frying. Rice sticks should never be boiled because they quickly loose their body during the cooking process -- it is crucial not to overdo it. When rinsing for salads or cold dishes, lift and toss while rinsing under cold water, then spread out on a clean cloth or paper towel to remove extra moisture and prevent sticking. Cold noodles can also be tossed with oil to help avoid stickiness. The most important method to prevent clumping and mushiness is to cool them down quickly and thoroughly.

The cow's heat is transmitted to the water pouch, a cooling effect that helps maintain milk production by keeping the cow about 6°C cooler.For continental climates where temperatures remain high day and night, the Aquaclim mattress recirculates cool water in the mattress and through a heat exchanger, to continuously cool the cow. Though exfoliation should be an integral part of skincare regime, this process of scrubbing can do more harm than good if overdone, say specialists. Dermatologist Dr Apratim Goel says, "If you have active acne or are suffering from rosacea then you must not use a scrub on your face as it may aggravate your skin problem." Apart from that, one must use a pore minimiser after scrubbing, advises cosmetolgist Dr Soma Sarkar. "Use an alcohol-free toner or rose water - take some in a cotton ball and then dab on your freshly scrubbed face," says Soma. Every scrub needs some minute granules and in homemade ones, ground sugar can be used. Aesthetician Ritu K Tanwar shares some scrub recipes that can be made at home. Honey-orange scrub Combine orange peel powder and oats in equal amounts (two tablespoons each) and mix one tablespoon of honey. Adjust the consistency to a thick paste,with a little water. Apply on clean skin using very mild upward and small circular strokes. Let it sit on face for a couple of minutes and then rinse well. Pat dry, tone and moisture. Banana scrub Take two ripe bananas, mash and add ground sugar. For hydration and moisture, add one tablespoon of honey. Gently massage this mildly fragrant pulp on your face for five minutes, then wash it off with cool water. Curd and papaya scrub Mix half-a-cup of ripe mashed papaya with two tablespoons of hung curd, three drops of lemon juice and one tablespoon of honey. Massage this homemade facial scrub into your skin using gentle circular motions. Leave it on for five minutes and then rinse thoroughly with cool water. Ground oats and tomato scrub Take a plate of ground oats and powdered sugar. Slice large red and ripe tomatoes. Dip two large thick slices of tomatoes into the ground oats and sugar mixture. Now rub your skin gently with this using circular motions. Once your entire face and neck are scrubbed, take some more tomato slices and let it sit on your face for a while. Tomatoes have natural bleaching agents and the oats soothe your skin. Lemon scrub for your hands, feet Take one lime and slice into half. Hold both the halves in your hands and dip into powdered sugar. Now, scrub your hands and feet for five minutes with this. Never use this on your face as this may harm sensitive facial skin. Leave it on your hands and feet for around five minutes and then wash off with lukewarm water to reveal smooth skin. How to scrub correctly Splash water on your face. Take a one tablespoon scrub and gently massage all over your face and neck avoiding the under-eye area. Don't apply too much pressure and do not keep scrubbing for more than two minutes. There's something really homely about Babai Bhojanam's setting of their Mana Bhojanam meals - right from the rapid welcome and seating process. I mean, even the name itself gives it away as it means 'our meal!' This place gets packed at lunchtime because of the comfortable loving nature of the staff as well. Get seated and you're handed small glasses of chaaru, its vermillon shade hinting at the throat-warming feeling of drinking it. Gulp it down, it's worth it, even in the summer. What follows is a server placing fresh-cut banana leaves on the table in front of you sprinkled with droplets of cool water as they've been rinsed for your hygiene and to be kept supple and strong. Then comes the food. But before that come clay pots bearing the in-house podi, a deliciously fiery powder which deserves several dollops of hot ghee to be mixed with rice. As Joey Tribianni from Friends says, "You've got to warm up your stomach."Then comes a spoonful (two if you're hungry) of the day's fresh pachadi, be it beerakaya (ridged gourd), tomato or sorakaya (bottle gourd). Stay Cool Is the Mantra at Iith
The Indian Institute of Technology, Hyderabad, (IITH), one of the premier institutes in India, is all set to use the radiant cooling technology to provide 'thermal comfort' to students in the newly-built hostels on its new campus. All the ten hostels would be provided with this system and they would be ready for occupation by June end.Radiant cooling system is not new to India and it was used by many kings while constructing their forts to provide thermal comfort. Even the Golkonda fort had this system and one can identify the remains of clay pipes used for this purpose.Under this system, pex pipes made using polyethylene would be embedded on the roof top and bottom of the room and chilled water would be circulated through them. Each room would have an inlet pipe that pumps chilled water and an outlet pipe that allows flow of hot water back to chilling plant. This would keep the room temperature between 26 to 29 degrees Celsius thereby providing comfort at a cheaper rate. Even the hostel room windows are designed in such a way that light and air will flow freelybut at the same time avoids solar rays entering the rooms thereby preventing generation of any heat. One chilling plant is being established to circulate cool water in pipes for all hostel rooms. As many as 10 hostel blocks -eight for boys and two for girls - are being constructed.Each building, with six floors, would accommodate as many as 192 students and each floor has 32 rooms. IITH will be the first educational institution in India to use this technology, which was put in use by Infosys and Tech Mahindra at Hyderabad."We are trying to provide the most comfortable system at minimum price for students," Prof. K.V.L. Subrahmaniam, Dean, Civil Engineering, IITH, told The Hindu.

Pupils Kept Prisoner by the Heat
THE state's peak parent body wants the start of the school year delayed or classes to begin earlier in the morning to avoid extreme temperatures.As Adelaide's heatwave continues to take its toll on students, airconditioners are failing in some classrooms and principals are encouraging parents to use their judgment and keep children at home if preferred.Some schools have dismissed students early while most others are keeping children inside at lunch.SA Primary Principals Association president Steve Portlock said some first-time students were upset because they were told at school they could spend recess and lunch with their friends and they had yet to experience this.South Australian Association of State School Organisations director David Knuckey, who represents the parents of about 90 per cent of public school students, said it was unreasonable to expect children to be able to study in extreme heat.Mr Knuckey said because Adelaide suffered through a heatwave at about this time most years, it was worth "seriously considering" delaying the start of term one or starting classes as early as 7am, when it was cooler, if long periods of high temperatures are forecast."This is the worst possible way to start your school year (and) we seem to be starting every school year like this," he said."We can't change the weather but we can change what week we send our children back to school."Education Minister Jane Lomax-Smith said the Government was always happy to listen to suggestions but the unpredictable timing of heatwaves would make it difficult to change term times in advance.Education Department chief executive Chris Robinson wrote to schools yesterday warning teachers to make sure children had "plenty of cool water", to modify outdoor activities and beware of falling branches if children were sheltering under trees.Airconditioning units at some schools have failed in the heat, including twice last week and once yesterday at North Adelaide Primary School.Principal Peter Rawlins said the problem, which he suspected was "due to ageing equipment", had been fixed within an hour and the school buildings had remained cool in the meantime.Reception student Adam, 5, said schoolyard equipment was too hot to touch but he had been keeping cool with a frozen ice pack from his lunch box."It's so hot," he said.SA Secondary Principals Association president Jim Davies said students were leaving school at "the hottest part of the day"."They go out of airconditioned classrooms into the sun and go on public transport but run into trouble because the trains aren't running because the rail lines have buckled," he said.
